Vindaloo was born in the western coastal Indian state of Goa. Influenced by Portuguese-style flavors, the Vindaloo curry is a delightful combination of a variety of Indian spices such as red chilies, cumin seeds, whole black peppercorns, cinnamon, black mustard seeds, and green chillies. These spices are soaked overnight in vinegar to enhance their flavors and then combined into a paste with onions, ginger and garlic. The sauce is further enhanced with brown sugar to give it a distinct sweet/spice flavor profile.
Vatsala's sauce reduces 10-12 hours of prep time to a mere 10-12 minutes. Just sauté with meat, poultry or potatoes for 7-8 minutes and then add water for desired consistency. Let simmer for another 4-5 minutes.
